Gourmet Restaurant With its bohemian country-chic ambience, in the pleasant setting of the Hôtel Royal Madeleine, Arboré is the new playground for chef Pauline Sené. Her menu revisits the codes of canaille and bistronomic dishes with an instinct that draws on a wealth of experience (L'Auberge Basque, Le 52, Fripon...). Its executive chef, Ashwin Marius Le Prince, has a sure touch for simple, well-cooked cuisine, with a twist for every dish that makes all the difference. The three-course lunch menu at €35, to be chosen from the short à la carte menu, is a convincing choice. The plates arrive perfectly dressed: veal tartare and smoked herring with a brilliant green sauce of chervil and parsley; flawlessly cooked sea bream with apple sauce, watercress cream and spinach; apple baked like a tatin on a disk of Viennese shortbread with shiso-scented yoghurt. The cellar is appropriate, flirting with fashion and bio, the most interesting being the well-crafted cocktail menu (reasoned sourcing and zero-waste production...). Service is friendly and relaxed. In fine weather, lunch is served in the Passage Puteaux (the shortest passage in Paris), with its old-world charm.
