Gault&Millau's review 2026

It made headlines in the gastronomic press: Matthias Marc leaving Substance, his table in the 16ᵉ arrondissement, to set up in the summer of 2026 in the Doubs, and taking in his luggage Sylvain Courivaud, his former second at Substance, whom he had then placed at the helm of Braise. The latter's departure, and no doubt the owner's desire to simplify the offering, have unfortunately largely diluted the magic of the beginnings, with Braise now fiercely resembling a simple bistro, like so many others in Paris: old-fashioned mayo egg and potato salad, beef onglet in pepper sauce, in its simplest expression, with respectable home fries, rum baba a little too neutral despite a good cream. Service a little disorganized.
