Grand de Demain de l'Année 2026: Loïs Bée crowned by Gault&Millau
This Monday, November 17, 2025, Loïs Bée, chef at La Table - Christophe Hay et Loïs Bée (3 toques) in Ardon, is the winner of the Grand de Demain de l'Année 2026 trophy.
The chef from La Table restaurant was awarded the title of Grand de Demain de l'Année 2026 at the annual ceremony held at the Maison de la Mutualité in Paris, on Monday November 17. This category rewards the future greats of French gastronomy. Three other talents were nominated for this award: Kévin de Porre of restaurant Fario, Kévin Garcia of La Table du Cap Estel and Quentin Pellestor-Veyrier of Maison Pellestor Veyrier.
"Now that's cool! Thank you Gault&Millau. It's an honor to be here and to see so many of today's and tomorrow's chefs. Thanks to my mentors, Jérôme Schilling and Christophe Hay. it congratulates the adventure we've been leading with my little wife for the past three years. Thank you very much," Loïs Bée enthused.
A Grand de Demain with roots and precision
The handover was a success at La Table restaurant in Ardon, near Orléans. Since 2022, Loïs Bée has been perpetuating Christophe Hay 's spirit of creative freedom, precision and respect for the Loire Valley's rich terroir.a native of Sologne, the young chef has traveled the length and breadth of France, working in some of the world's finest restaurants: Côte-Saint-Jacques with Jean-Michel Lorain, Lalique Restaurant - Château Lafaurie-Peyraguey with Jérôme Schilling and Emmanuel Renaut.
For the past three years, Loïs Bée and his partner Chloé Matter, who works in the dining room, have been at the helm of La Table. Together, they have created a place that reflects their own personality, full of freshness, elegance and modernity. In 2023, the chef was awarded the title of Grand de Demain at the Gault&Millau Tour Centre Val de Loire, as well as a third toque for the restaurant.
