Prestige Restaurant Such efforts to win over the clientele of this Sauternes château, led by Lalique and its president Silvio Denz, and to meet the standards of the traditional guidebooks, undoubtedly deserve to be rewarded. On an individual level, Jérôme Schilling, whose passionate commitment and perfectionist drive are even more evident than his ambition - the title of MOF 2023 proves it - is on the right path. He sometimes lacked a little nerve, or a little underwear. But today, imbued with his environment, playing on the characteristics of the vintages of this great Lafaurie-Peyraguey liquoreux, his personality is asserting itself. In lean dishes such as ceviche, remarkably sustained in acidity by citrus fruit and vinegar, as in hake confit in grape seed from the first selections and salt, of a very subtle sweetness with a bergamot sauce and the first white asparagus, one senses as much mastery as convincing inspiration. He now needs to broaden his palette even further (times are tough, of course, but two menus with no choice, including one vegetarian, is still a bit short), for example by offering more dishes that appear simple but are very well worked, such as his matured beef petit pois and a love of spring vegetables cut into mirepoix-style cubes. A huge, serious cellar, sufficiently well-structured and, in the end, moderately priced to cater for all budgets, including the craziest, with dreamy bottles from all vineyards and all countries (Pingus, Penfolds, Screaming Eagle...) and, of course, a huge Bordeaux representation. Excellent service, coordinated, fluid, bilingual, calm and efficient.
