Prestige Restaurant Jérôme Schilling is still a young chef with a bright future ahead of him, yet he's already mastered his craft with confidence and a smile! This year's sponsor of our Gault&Millau Tour Aquitaine, Jérôme Schilling is leading his career with brio. In the crystalline luxury of Lalique's chateau, whose bay windows open onto the vineyards, he brilliantly combines the riches of the Sauternes region with the prestige ingredients of a great house, playing with different vintages. Capable of bewitching you with his now signature cauliflower, oyster tartar and caviar, a creamy sauce made with vodka and champagne, he shows as much inspiration as technique on lobster condiment framboise, fermented pak choï cabbage garnished with lobster legs, a beautiful association with a few fresh raspberries and above all a magnificent verbena vinaigrette sliced from a lobster sauce with old Sauternes. Regulars are delighted to see the reappearance of a menu featuring a number of flagship dishes in addition to the grand prix menus (€220 and €260 in the evening), such as the crisp, gourmet sweetbreads with coffee and licorice. Julien Cozzi is always the master of ceremonies in the dining room, where the chef's wife appears, greeting new arrivals with smiling kindness, and the desserts, like the now-classic rose des vignes, pineapple meringue with sauternes and kefir, make a refreshing conclusion. The service is flawless, fluid and efficient, and the 2,500-strong wine cellar features the world's finest wines, with an unrivalled selection from the nearby vineyards.
