in Dol-de-Bretagne, a familiar address is about to write a new chapter. Where, for twenty years, a roadside restaurant welcomed travelers and workers with generous dishes, two seasoned professionals are now transforming the place into a culinary house in their own image. DAMES is the name chosen by Marine Hervouet and Pascaline Albicini for their first restaurant, the result of a long-standing partnership and a history of excellence.

Far from being a conversion of surface space, their project is rooted in a sincere desire to offer a demanding and clear cuisine, in a setting redesigned to encourage exchange and conviviality. in the image of the place, sober and warm, their approach combines memory of gestures and freedom of tone.

Two backgrounds serving the same project

Marine Hervouet is in charge of the kitchen. Having worked forAlain Passard, Bruno Verjus and as a chef in Paris, she has forged a style that combines precision, technique and sensitivity. Her cuisine, rooted in French fundamentals, is distinguished by thorough cooking, the right seasonings and sauces that structure the dish without masking it. His dishes aim for purity and precision, like veal sweetbreads with blackberries or mature pollack with fresh peas.

at his side, Pascaline Albicini orchestrates the service and the cellar. She honed her sense of detail with Apicius, Joël Robuchon and Philippe Etchebest before choosing to work in the dining room rather than the kitchen. A fine connoisseur of wines, she offers a selection free from the effects of fashion, between well-known names and winemakers committed to demanding agriculture. Her proximity to Marine's kitchen allows for a fluid dialogue between plate and glass, designed to reveal rather than juxtapose wine pairings.

A place designed like a home

With 35 covers, a room bathed in natural light and soon a terrace extended by a garden, DAMES asserts a certain intimacy. The configuration of the tables invites conversation, whether for a dinner for two or a large family gathering upstairs. The restaurant will be open from Wednesday to Sunday evenings, with lunch service at weekends.
