The beautiful golden color reveals a bouquet marked by evolution, with aromas of walnut, caramel, chestnut honey and gingerbread. On the palate, under fine, creamy bubbles, the wine is full-bodied and taut. Notes of dried fig and spices (cinnamon, cardamom) follow through to a balanced finish. A complex wine that will satisfy lovers of old champagnes and, with its intense umami, will go well with old Parmesan or poularde au vin jaune.

Vincent Couche cultivates his 15 hectares in the heart of the Côte des Bar. Constantly attentive to nature, he carefully studies the needs of his vines, and since 2008 has been infusing them with energy and well-being through biodynamic treatments. His vines in Buxeuil (12 ha) are mainly pinot noir, while those in Montgueux (3 ha) are exclusively chardonnay. A passionate perfectionist, Vincent works tirelessly on the microbiological development of his soils. Replanting fruit trees and keeping sheep and chickens in the vines are part of the process. The wines are remarkable and well distributed.
