Eight years in the cellar for this champagne, disgorged in 2021. The nose is reminiscent of bitter almonds, while on the palate the wine reveals power, complexity, length and balance, with notes of both gourmand and chalky, with fatness and roundness blending notes of fresh butter with the chalky unctuousness of the terroir. A wine that is still very young, but already seductive. Wait another decade for it to reveal its notes of undergrowth and wild mushrooms. Enjoy it with roast pheasant.
