Behind this non-vintage blanc de blancs lies a pure 2008 aged for almost 10 years in the cellar. The nose is delicious, with notes of brioche, ripe yellow fruit, mirabelle plum and candied lemon. On the palate, the wine is both full-bodied and taut, thanks to judicious dosage. The bitter finish suggests opening this great wine with a noble fish.
