The alter-ego of Cuvée Les Fournettes, this Pinot Noir parcel, also dosed at 2 g/l and harvested on the same date, develops extra complexity on the nose and palate, with a vinous character and power brought by the terroir and age of the vines (35 years). The fresh, mentholated finish makes this a fine Champagne to match a pike with beurre blanc.
