This cuvée, from a plot with strong character in the Chouilly terroir, justifies its vinification and eight months' ageing in oak tuns. The nose offers fine grilled and smoky notes. The palate, reflecting the density and richness of the precision-harvested crop, is coated with a fresh, saline, chalky quality. The patina of time (4 years of rest after bottling before disgorging) means that this cuvée can be enjoyed now. Perfect with a vol au vent.
