This perpetual reserve started in 1995 expresses the Chouilly terroir with depth. The richness and flavor are held together by an intense, saline frame, and interwoven with beautiful bitters. It's massive, yet airy and finely spiced. A delicious wine driven by fine, lively bubbles, but contained in a velvety, airy texture. Flavors of meringue, pistachio, red pear and fine pepper will reveal themselves with as much intensity as distinction on fine poultry, such as poularde with raisins and green curry.
