Magnificent expression of the Chouilly grand cru. Prolonged aging evokes fresh vanilla, Sicilian pistachio, Williams pear and quetsche plum. On the palate, the texture is slender and fleshy, with a beautiful amplitude that is both savory and chalky. A finish of bergamot, plum and hazelnut combines persistence and freshness for elegant pairings like braised turbot with grapefruit butter and caviar.
