Glazed brioche-buns and subtle yellow fruits on the slightly spirity yet elegant nose, with caramel but no evidence of sweetness, and feels very soft. The bubbles and mousse melt into the unctuous but elegantly fresh palate with lots of sandy salty salinity, hard pear, crisp red (and green) apples, a gastronomic wine for shellfish and sea food with creamy sauces, and ideal for salted caramel desserts, very well balanced and retains acidity and freshness, not sweetness.
