The creamy acidity of lemon curd, the tenderness of clementine and the hint of sweet acidity from kumquat make up a very pleasant, fairly complex nose with a welcome tension. This tension is echoed in the intense, acidic texture that stretches the palate and takes you to wave-swept shores, bringing a saline edge to the finish. The whole shows precision, before an intense finish of freshness and tension. Very salivating.
