Sponsored At Sapiens, you come to devour exceptional products from the day's hunting, fishing and gathering. They are carefully selected and sublimated by fire-cooking. The team works with local, fresh, seasonal produce, using their unique know-how: Pyrenean ribeye steak, aged for 60 days, pork belly from the Basque region, grilled line hake... All of which is enhanced by excellent service in an inimitable setting: rough-hewn wooden furniture, rock frescoes, Occitan redwood tables, lush vegetation and a view of the charcoal oven from the open kitchen. Menu from €19.50, main courses €16. "The quintessence of Sapiens lies in the desire to create moments of sharing through sustainable, high-quality gastronomy, accessible to as many people as possible", stresses Erwin Boodhun, founder of the chain, which now comprises two restaurants: one located in the heart of Les Halles de La Cité in the south of Toulouse (open since 2021); the other in Balma, opening in May 2023. The group specializes in catering services, offering breakfasts and cocktail dinners on request.
