Chef's Restaurant It's a rare vision of luxury, with traditionally charming country houses set on the Dronne River, like a small village of yesteryear. Here, refined, historic furnishings, lovely terraces in a natural setting, and Alain Gardillou's cuisine, capturing the essence of Périgord through his products and recipes. These include, of course, duck foie gras au naturel, burnt walnuts, apple and yuzu, walnut oil, white asparagus, creamy wild garlic and fresh herb sauce, and pasta with Périgord black truffles, escalope de foie gras poêlé à la ciboulette, filet de Salers, jus au vieux porto, roasted pumpkin seeds and Curnonsky-style potato mousseline, dessert of glazed Périgord black truffle, terre de cacao, hazelnuts and salted butter caramel. Exceptional cellar, with over 900 references.
