His cuisine is inspired by the Périgord region, with a short menu focusing on organic and seasonal produce, and a mix of Asian flavors from his travels. You'll be tempted by the traditional pan-fried foie gras, smoked for a minute with white grapes and a mead and verjuice sauce, the soft scallops caramelized with miso and served with celery, apple and pear, or the seriole, tigermilk with lychee and crunchy daikon.
