A beautiful 17th-century house in the heart of the historic district, renovated in a refined style in harmony with the regional style. Chef Nelson Da Silva's contemporary cuisine revolves around local produce, and his aesthetically pleasing dishes include grilled leeks, potato espuma, truffle jus and vichyssoise with kintoa bacon, roasted cod, lentil risotto and vinegared mussels, lentil crunch with curry, shellfish jus emulsion, ravioli of confit baby lamb from Marina Ortiz, roasted butternut, tarragon, creamy shiitake sauce, chocolate and tonka bean shortbread, caramel crunch, Basque hazelnut custard, pear sorbet.
