South of Dax, Aurélien Bellocq runs this fine southwestern inn, where regional specialties are the main attraction. The dishes express a strong authenticity in both recipe and style: green lentil salad with beef tongue stew, wild hake steak with chorizo, creamy vegetables and smoked fish jus, poultry paupiette stuffed with mushroom duxelles deglazed with cider, roasted butternut and cooking juice, or almond milk clafoutis with seasonal fruit.
