Gourmet Restaurant Their complicity is first and foremost that of Hugo and Sophie de Brisson de Laroche, who met at Guy Savoy and have never left each other since. History took them all over the world before they finally settled in Dax. This table breathes as much of an obvious four-handed composition, as of a real technique, bringing a fine and well-made bistronomy, the 64°C egg from the Cadillon farm, creamy button mushrooms, crispy parsley and roasted hazelnuts, a Pyrenean trout tartare, cucumber-dill, apple-vodka gel, small Chinese cabbage salad and multicolored carrots, a black pudding from the Basque region grilled a la plancha, thyme-roasted pear and sweet potato cream, a dessert of fresh goat's cheese, strawberries marinated in white port, honey and pink berry vinaigrette, herb crumble. Menu €32.
