Transalpine chef Vasco Baldisseroto adds a touch of elegance to this refined change of scenery, and his well-composed menus provide an original score for the city: winter vegetables with beet cream and rose, risotto with Tonka bean and pollen, roast veal with red cabbage vinegar and curry sauce, blanc manger with citrus fruits, in a €69 formula brimming with attention to detail. Well-stocked cellar with wines from nearby regions, notably Rhône (Combier, Colombo, Beaucastel, Montirius...).
