Vasco Baldisserotto left his native Italy to settle in Rodez, after gaining experience at leading Italian and French restaurants, from L’Albereta in Erbusco to Maison Bras and Le Calandre. From these experiences emerged his restaurant, Opéra—a modern and contemporary establishment that doesn’t forget the classics, as exemplified by its Game menu, available year-round by reservation and particularly highlighted during peak fall season. Tonight, the “Opéra” menu at €94 and the “Saison” menu at €74 are on offer. We delight in navigating between Italian and French flavors, as with this potato purée with smoked Bolognese or these golden pattypan squash in an egg vinaigrette—though the latter could use a bit more depth in the promised briny note, which is barely perceptible upon tasting. The pigeon is cooked to perfection, followed by a regional cheese platter and a Reine-Claude soufflé—classic in execution but lacking a touch of whimsy. The wine list follows the same path between France and Italy, presented by a sommelier who is as professional as he is enthusiastic, with a natural and approachable style. A gourmet restaurant of this caliber is certainly a welcome addition to Rodez.
