In Labarde's former train station, Manon Garret orchestrates a flawless service for eight diners, perfectly mastering reception, service and oenological advice. In the kitchen, Thibault Guiet develops an instinctive approach with strong Asian influences. The €98 set menu reveals a cuisine of character: a cauliflower appetizer playing on hot-cold contrasts with smoked haddock and bonito, crab ravioli in Thai broth tangy with yuzu and lemongrass, cod with broccoli cream and Asian vinaigrette. Galician beef fillet, cooked with kamado and garnished with smoked eel, illustrates this multicultural approach. The wine list, centered on Bordeaux with organic openings and foreign references, justifies its upmarket positioning. The intimate atmosphere of the refined, warm setting completes a coherent gastronomic experience, despite a single menu that limits choice.
