The Prince is generous, lively and warm. Based in the former stables of a château, Vivien Durand's technical cuisine focuses on local, seasonal produce. The €160 Signature menu reveals a methodical approach in which each preparation enhances the central product. The tomato-rhubarb appetizer strikes a masterful balance between acidity and sweetness. Capbreton sar carpaccio, enhanced with caviar and beurre meunière, exploits the freshness of the fish without artifice. The cod, in a meunière sauce prepared in the dining room, is enriched by a cod and monkfish liver condiment that adds depth and character.
