Remarkable Restaurant The third toque this year for Nicolas Lormeau, one of Béarn's most inventive and interesting chefs, in this beautiful rustic room with old parquet flooring and a Zen atmosphere, extended by a vast terrace for the summer. Playing on rusticity and elegance, he finds, with his excellent seasonal produce, the right combinations and tastes in approaches that are sometimes bold yet masterful: snacked gambas, confit pig's trotters, tamarind consommé, daikon, potato mousse and wasabi, redfish in peach of the day, béarnaise pepper, leek, rouille, lamb, white BBQ asparagus, effiloché, brown beer emulsion, cream of asparagus, in a very aromatic composition (immortelle oil with a soft curry perfume), powerful and balanced, and a beautiful dessert around strawberry, Maydie foam, pistachio crunch, rosemary gel, beet meringue. Service is also improving, under the supervision of a new manager, and the wine cellar is broad and interesting, with some world wines and spirits, not forgetting Ogeu, the water from the Pyrenees.
