Gault&Millau's review 2026

We ardently support Nicolas Lormeau in his evolution, particularly since his move a few years ago to this beautiful 19th-century bourgeois mansion on the outskirts of Pau. Nevertheless, we feel that this year has seen a slight slowdown in the kitchen, accompanied by a slight lack of efficiency in the dining room. We'd like to think it's a temporary setback, given the young chef's habit of delighting us. We have every confidence in him, all the more so as we savored with great pleasure the foie gras and pig's trotter terrine, as well as the very interesting and gourmet white tuna carpaccio. The wine cellar is as interesting and varied as ever, and showcases the region to its best advantage.
