The two toques have held their own over the years without a hint of disappointment or surprise. The restaurant remains true to itself; the offices and shops around La Madeleine keep it thriving, and the menu is reassuring, striking just the right balance: pâté en croûte, creamy avocado-topped shrimp tartare, langoustine ravioli, stuffed chicken with maître d’hôtel butter, green peas, carrots, and tarragon jus, Valrhona chocolate cake… An extensive wine cellar, also classic, focusing on Bordeaux and Burgundy.
