Gault&Millau's review 2026

It's a classic on the rue Volney, operating in the same mode for the past ten years. Since 2021, the address has been under the direction of Olivier Bury, while the kitchens are run by Ludovic Thiéry. Fusion bistronomy, duck breast with black curry carpaccio, williams pear gel, kumquat and buckwheat oil, cod with smoked pimenton, split pea and verbena purée, petit bois and cider beurre blanc, seine-et-Marne pig confit and grilled, sweet potato purée with walnut oil and green asparagus, jalapeño, walnuts, honey jus and oyster sauce, honey panna cotta, honey tuile and gel, lemon, thyme and honey ice cream with salted butter. Well-educated cellar with around four hundred references.
