Chef's Restaurant A former Rothschild residence built in 1911 in pure Neo-Norman style, the Château de Montvillargenne is now a sumptuous 4* hotel just a few dozen kilometers from Paris. The building's opulent, bourgeois spirit has been perfectly preserved, transporting guests back to the splendor of the Belle Époque, with its coffered wooden ceilings, floral carpets and heavy textiles, large two-story windows and wrought-iron railings, and traditional table settings. To garnish the tables, chef Léo Chinot defends classic, well-made bistronomy: mackerel in escabeche, redcurrants and pickles; roasted turbot, carrots, lemon and citrus beurre blanc; Rossini beef, truffle purée and bordelaise sauce; dark chocolate, chili pepper and bell pepper dessert.
