On the left bank of the Ariège, this splendid 19th-century bourgeois mansion, with its slender forms and pointed roof, is now home to a fine hotel offering, with very minimalist rooms, and a table signed Jean Cazorla. The €31 menu features duck breast sablé with fruit chutney, a beautifully cooked peach return, a millefeuille of tarasconnais and seasonal vegetables, and a hot chocolate fondant. A wide range of formulas.
