A versatile address that we always love to return to, in the heart of the Ariège region, offering a total experience of undeniable authenticity. First and foremost a livestock farm, the establishment offers a direct-to-farmer menu, with the products used being raised on site as much as possible. Then there's the store, with its home-made products, tableware and events focusing on pastoral traditions and transhumance. Taste-wise, classic country fare is the order of the day, with a straightforward approach: cochonnailles, carpaccio de boeuf, menthe basilic, pavé de truite grillé, sauce vierge, pommes de terre au four, l'Estival burger ferme de boeuf gascon, côte de veau rosé façon Lacube, or parillade de trois viandes.
