Gourmet Restaurant In the heart of the village, Émeric Corbon has found a charming little house in which to take his first steps as chef-owner, thanks in part to the Gault&Millau Dotation. We were right to reward this talented chef with a good head on his shoulders. A welcoming inn, with its small stone vaulted room extending onto a pleasant terrace, a good start for the man who was for several years the chef at the Moulin de Lourmarin for Édouard Loubet, after having worked at Bournissac, Kayser and Chenet... He learned to domesticate Provençal herbs and flavors, offering his first menus a fine vision of the terroir, with eggplant papeton with tomato coulis and thyme, stuffed zucchini flower flavored with tarragon, farm-raised guinea fowl sautéed with ratatouille grenailles en persillade jus des sucs aux herbes... A solid classic base, a good sense of seasoning for a plate that's already showing its character, right from the breakfast menu at €23, the overall prices being very reasonable for the moment (€35 in the menu-card where you can pick and choose as you please). Over time, these inspirations will be refined and further improved (the friendly service, a little overwhelmed by success, the cellar which will be expanded, the plastic cards to be modernized...), but already, the Jas is the best offer for miles around, and a godsend for devotees of La Roque's annual music festival.
