Gault&Millau's review 2025

For over two decades, Catherine and Daniel Ettlinger have been delighting diners in Le Rouret, the bastion of truffle growers in the Alpes-Maritimes. Their recipe for success is simple: two menus that change daily, a 3-course lunch menu at €47 and a 5-course market menu at €82. The chef works with local produce with obvious mastery, and we're seduced by a Niçoise 2.0 salad with winter vegetables, a filet of turbot and a few vegetables of the moment just snacked a la plancha with a light grenobloise, and finally the apple cracker in filo pastry with frangipane and caramel sauce will fill us with ease. In season, we don't shy away from the all-truffle or all-lobster menus at decent prices of €135 and €130. The wine cellar, with its hundred or so references, gives pride of place to wines from the region. It's a pity that wines by the glass don't have their own page, but the experienced, smiling waiters are always ready to give good advice.
