Chef's Restaurant Clément Leroy is to be congratulated on the progress he has made in the last year, since taking over this institution from Guy Savoy, with hard work, commitment and, quite simply, talent, and we have no doubts about his ability to turn things around when necessary. In the current difficult economic climate, the restaurant, like everyone else, is going through some turbulence, both in the dining room, where the staff are willing, but not yet up to the desired level, and on the plate, where maintaining the restaurant's high prices while reducing the menu has become a challenge. As the weeks go by, the chef introduces rare meats from his own breeding, which makes for some good plates to add as suggestions, like this very good wagyu ham tasted the other day. As the months go by, Chiberta should find the right carburation and the desired virtuous axis. Classic cellar with expensive glasses.
