If anything, we'd be more inclined towards this open version of the author's restaurant, which is certainly simpler, but also more accessible in its aspects: tuna tartare with soy sauce and cebette, miso-marinated cod, teriyaki salmon, karaage chicken and selected meats (Teshi worked at Desnoyers for a long time, perfecting his knowledge of beef). And a fresh fruit salad as a finishing touch.
