Le Grand Bornand is undoubtedly one of the pearls of the Aravis. A beautiful village with chubby chalets and a distinct Savoyard accent. It's said that 2,000 inhabitants and 2,000 cows live here... It's about time young people settled here. That's the challenge facing Jeremy Bibollet, a native of the region. After a career in fashion and an adventure as a shepherd in the mountain pastures above Ugine, he and Maxime Nait-Chalal, a professional restaurateur, have opened a charming restaurant and a three-way score, with young chef Morgane Souffront, already spotted at L'Ecuelle in La Clusaz. The menu is a little classic: filet of beef Rossini, or fish of the day with carrot purée, we'd have liked something more unexpected. But the veggie starters are full of promise, and rather fun: the smoked cauliflower purée, roasted cabbage with sumac and cauliflower petals, is a real success. The butternut velouté with egg and Espelette chilli is well done. For fondue lovers, you'll find Jérémy's grandmother's (successful) recipe, and a few variations with champagne and truffles. Desserts are simple: baba is a bit like rum-infused pound cake, while shortbread and tatin round out the offering. The wine list is expanding, with a few regional wines.
