Up there, on the mountain, is Beauregard. Not Jack from *I Am Nobody*, but the domain of Édouard Loubet, 2011 Chef of the Year, an accomplished skier and hunter who finds his true joy in the mountains, serving up authentic and incredibly flavorful dishes. The charcuterie and cheeses, authentic pormonier in pastry crust, the Reblochon pie, trout quenelles, and sometimes multi-toque dishes from the man who was long considered the prince of herbs, aromas, and flavors, straddling Savoie and Luberon.
