Chef's Restaurant On the road to the major resorts of the Aravis, Le Cairn is a charming little place that is sure to become one of the valley's finest restaurants. Charline and Adrien shower their guests with every possible attention. The menu has been reduced to two menus ("Balade" and "Ascension"), featuring excursions to local producers. After a first course based around trout (very pretty, but a little bland), the rest of the menu is full of surprises and flashes of brilliance. The magnificent white asparagus is roasted, with a yellow wine and walnut butter and a few nasturtium leaves: it's delicious. Arctic char (from Maison Murgat) is accompanied by a smoked butter sabayon and a spinach "tombée". A few touches of shallot purée with white wine add a welcome touch of sweetness. Saddle of lamb from Haute-Savoie and its reduced jus are very tasty. Here too, mint adds a touch of freshness. The mountain climb ends with a colorful strawberry-rhubarb duo. The audacity of a second dessert with lemon and hazelnut is commendable... only the Joconde cookie leaves us a little perplexed, but once again, the tastes are very well realized. The wine selection covers the whole of southeastern France. The food pairing with 4 wines is an honest choice for €32. One more point this year.
