Chef's Restaurant After ten years at Monsieur Paul's, Olivier Said had enough experience and technique to go it alone, in this charming Auvergne village now bathed in sunshine by the chef's Provençal dishes. The latter combines local produce with the taste of the Midi in compositions of exemplary execution, notably in the beautiful €59 menu, with pissaladière of snacked scallops, cantal shortbread, Espelette pepper and parsley jus, back of cod in olive oil, gambas, fennel confit with lemon and sauce vierge, roast saddle of rabbit stuffed with kidney, tapenade jus and vegetable tempura, and finally a beautiful millefeuille with lemon and kalamansi, basil sorbet. Good cellar selection.
