Remarkable Restaurant The story of Christelle and Rodolphe Regnauld is above all that of a resilient spirit, capable of overcoming trials and tribulations, the better to rebuild the paths that bind us together. It's this taste for transmission, this travelling spirit capable of placing the sea alongside the mountains, that prompted the couple to revive their inn, where the boatmen who took the Auvergne to Paris were once supplied. The building is full of energy, a charm that evolves from room to room, with a frank identity that conveys a message. We find the chef's long view, skilfully blending climates, those of his native Brittany and those of his wife's Cantal, a bridge between Auvergne and the shore. We have the snail cromesquis in herb butter with mussels from the Bay of Mont Saint-Michel and a parsley declension, between the meadows and the beach, the salty winds and the dew, the generous pie of blue lobster, full-bodied head juice, mushrooms and vegetables from Éric Roy, the fine effiloché of beef cheek from Gaby Gauthier's confit in Auvergne wine, with Mr. Deplat's sweet potato and small vegetables from Mr. Deplat. Finally, a fine meeting of ambassadors between parsnips from the plains of Limagne and Bordier's Arabica ribot milk; all finesse and diplomacy.
