Description
Sponsored Before taking up the reins at Le Carré d'Or, in his native region, Kilian Duchêne cut his teeth in a number of top establishments, including Le Flocon de Sel, in Megève, and La Villa, in Luxembourg. A solid background for spoiling the palates of his guests. At Carré d'Or, he has chosen to focus on a cellar of mature meats, featuring exceptional breeds of cattle (Wagyu, Noire de Baltique, Simmental or Sashi). The menu also features French breeds selected from among the best. Seasonal vegetables and starches accompany these dishes, not forgetting a sauce worked with subtlety so as not to distort the original taste of the morsel. "Customers are astonished by what they eat: meats with a powerful, mellow taste, fresh, raw produce worked with passion", recalls the young Chef. Wines from small producers complete the culinary experience. Fish and vegetarian dishes are also on offer, to satisfy all customers. "Eventually, I'd like to enrich my maturing cellar with new breeds of meat, and always maintain a high level of quality".
