Visitors to this magnificent town (with the highest density of historic monuments in France) find a salutary gourmet haven with this personal cuisine rooted in a chosen setting, and his €38 menu is a bargain: cold salmon in tataki with coriander cucumber and wasabi, poultry breast with celery purée, pomme confite façon tatin caramel beurre salé ice cream. Classic cellar with a dozen choices by the glass, French and Belgian beers.
