It may not be located in the most glamorous part of Manosque, but it attracts all the local gourmets. Local chef Pierre Grein's fine bourgeois cuisine is reflected in his €110 menu. In five courses, his signature starter of cappuccino potatoes, black truffle juice and smoked espuma, organic hen's egg florentine, creamy baby spinach and toasted croutons, scallop walnut with hazelnut butter, with parsnip velouté and iodized foam, sauté-roasted free-range poularde, petit épeautre en duxelles and jus double, vanilla and chocolate dessert, tube croustillant gavotte, ganache montée vanille bourbon, streusel noisette, cremeux chocolat, sphère cacao coulant and ice cream.
