Nicolas Seibold and Clémence Bellemin left Lyon for the garrigue scents of this charming Vaucluse village. Their exile gives rise to a fine regional cuisine, benefiting from an aesthetic and well thought-out setting, between clean lines and Provencal style. Their €85 Sarriette menu is a reminder of why their Mutinerie was such a success, with compositions as well-executed as ever: a soft-boiled egg, Jerusalem artichokes, hay-smoked Parmesan emulsion, truffle mouillettes, cucuron chickpea croustade, black garlic aioli and toasted sesame, Mediterranean sea bass, carrots, lemon confit and parsnips, or wood-aged Aubrac beef, caramelized cauliflower and meurette sauce. Professional service. Remarkable cellar.
