What a pleasure it is to return to Nicolas Seibold's cuisine and Clémence Bellemin's attentive welcome, one year after the closure of their Lyon-based Mutinerie! It's in Ansouis, a charming hilltop village in the Luberon, that they've chosen to set down their suitcases and open Garrigue, a table already firmly rooted in and attentive to local produce, replacing the excellent Closerie des Alemany. Here, alas, there's no menu, and no choice, just a surprise menu, just like in town. Highlights include a variation on tomatoes - field tomatoes, tomato and verbena sauce, fresh mint and cucumber jelly - with a fresh twist. Further on, a roasted veal with remoulade and porcini purée, creamy potato and reduced jus, more comforting and generous. The cuisine is seductive in its lightness and precision, sometimes even a little too discreet given the promising titles advertised in the dining room. This address is still in its infancy, but it's already a harbinger of great things to come. As for the cellar, the selection is impressive for such a young establishment, featuring such fine contemporary names as Thomas Pico, Myrko Tepus and the elegant bubbles of Romain Henin.
