Chef's Restaurant In this magnificent, tastefully restored Mauges château, combining tradition and modernity through monumental sculptures in the grounds or more intimate sculptures in the dining room, young, new chef Lucas Bahuon is already making his mark with undeniable talent. His cuisine is all finesse, delicacy and thoughtfulness, right from the appetizer of peas, discreet herb juice, horseradish cream and mint flowers with angelica candy; followed by a feast of dishes where everything is just right, such as the large green asparagus, hollandaise sauce delicately spiced with a hint of cocoa, its bao bread just grilled for a few seconds, or the translucent fish on a rock broth with subtle flavors, accompanied by a bowl of buckwheat far; and then the emotion of a three-toque dessert, of course, barely sweetened, created by the new pastry chef: Pieces of rhubarb poached under a veil of hibiscus, an airy sorbet with garden herbs softened by a creamy fromage blanc; intelligent, refined cuisine and the two toques confirmed straight away, not forgetting the charming welcome from the owner. The wine list is rather short, but very diverse, with a "muscadothèque" and leading winemakers (P Guérin, Domaine Lieubeau...).
