Sponsored In 2020, Stéphanie and Thomas Passot took over this more than one-hundred-year-old inn, where the painter Alfred Sisley once stayed. Exposed beams and stonework harmonize with Thomas Passot's traditional, semi-gastronomic cuisine. Before settling on the banks of the Loing, he worked in a number of famous Parisian brasseries. Changed every three months, the menu features noble meats, duck breast and forgotten vegetables, as in this flame-cooked fillet of beef with green cabbage and bacon, glazed carrots and full-bodied liquorice-scented jus. Everything is made on site, right down to the bread and ice creams, in this restaurant where service is deliberately limited to around sixty covers. When it comes to desserts, La Palette always offers a trompe-l'œil. Selected by an oenologist, the wines (around thirty) also change with each season, depending on the menu.
