A practical and fair-minded hotel restaurant for the traveler in Chalon. Simple, well-kept surroundings, adapted cuisine, offering choice and good manners in a contemporary vision by chef Nicolas Birault: marbré of Bresse poultry with foie gras and dried fruit chutney, back of pollack with haddock emulsion and saffron linguine, pressed shoulder of piglet with chard jus and Fallot mustard, millefeuille glacé café with praline custard. The à la carte menu is €47, and the cellar is interesting for its variety of wines from the Côte Chalonnaise.
