The hustle and bustle of the regulars sets the mood for this unusual wine cellar. Hughes Noël (a gift name) is the archetype of this new generation of wine merchants with a sense of discovery and an immoderate love of winegrowers who want to make good wine, not "piss off the vine". In other words, you uncork a bottle, taste it, and emotion does the rest... In his cellar, he accumulates great classics (Château Mouton Rothschild 1979, Australian wine from the Yarra Valley 2012) and a plethora of friends' wines that go for around €10: Corbières "Apache" from Domaine Vin des Potes, Alsace "Blanc Bec" from Christophe Adam, Roussillon "L'Œuf Bleu" 2022 from Rière Cadène, Rasteau from Domaine du Trapadis from Helen Durand. Settled in the small garden at the back, in harmony with a glass of Côtes-de-Gascogne "La Côte d'Heux", we enjoy the menu of the day, slices of smoked Italian pastrami-pickle just passed through the blowtorch, delicious haddock-roasted leek parmentier and pear clafoutis.
