Gourmet Restaurant An elegant, sober dining room, with a few frames on the wall and a few bottles, a studied table setting, a menu based on ideas that know how to follow fashion... Enough to bring back a chef's hat for Sylvain Le Bras, with this rather inspired and elaborate €38 menu, featuring numerous ingredients on each plate: shrimp ravioli flambéed with Ricard, purple carrot and cumin reduction, bisque emulsion, ballottine of turkey with French toast-style chestnuts, trompettes de la mort, daikon tagliatelle, nashi poached with Madagascar vanilla, pumpkin praline and black sesame, yuzu foam, tangy creamy pear, crunchy dark chocolate tuile. Good regional cellar with a good list in the Nantes region.
