On the outskirts of the town, towards Noirmoutier, the anthracite facade with its tiled roof is intriguing: modernity is in the driver's seat, the setting is sober and warm at the same time, and the chef works the region with great ideas and know-how. The €38.90 full-sequence menu allows you to explore the menu and indulge yourself: langoustines with semi-salted butter and Bouin goat's cheese emulsion, eels from Lac de Grand-Lieu meunière, truffled free-range poultry in ballottine cooked in a casserole with Albufera sauce. For a little extra, you can add Pascal Beillevaire's cheeses (the parent company in Machecoul is nearby), before figs flambé with mushroom cream or Valrhona chocolate crunch with Dulcey cream. Cellar a little too classic, despite a few local wines (fiefs, muscadet) and a few organic ones.
