Chef's Restaurant Tradition is good. Especially when it's expressed in the invigorating spray of the ocean, and in a house with a long-standing reputation that Sylvain Bélouin and his wife have managed to keep alive. With more modern flair, but the same attention to product, always well chosen: cockles and clams from the local fishery, cauliflower sorbet and Kaviari osciètre, sea bass from the Bourgneuf fishery, polenta with porcini mushrooms and sautéed porcini mushrooms, veal sweetbreads with hazelnut butter, lemongrass veal jus with lobster coral. Desserts are just as good (a good finger chocolate), and the 400-strong cellar also supplies the wine bar.
