Of course, this doesn't stop chef David Bourmaud from working with noble products, adding his own special touch in this pretty setting with its sober contemporary style near Challans: fine scallop tart, mushroom marmalade with foie gras, curry passion vinaigrette, pigeon with mafé, smoked beet, roasted vegetables with millet, shallot confit, mandarin parfait, peanut and hazelnut gianduja quenelle, orange hibiscus juice for a fine meal with no false notes.
